Boiled Malabar spinach and Black Fungus

Gibson’s colleague loves to cook this for her “afternoon snack”, not only it is cheap yet rich in all kinds of nutrition. It is so easy to prepare as long you have hot water. So it could be a good dish during the festive season of the Nine Emperor Gods.

However, the taste of the Malabar spinach may not be everybody’s favorite, but if you think of the benefits of the dish, especially for healthy skin, you might reconsider. To be honest, Gibson is kind of addicted to this dish.

To cook this vegetarian snack is rather simple; all you need are the Malabar spinach and Black fungus. Boil both of them in hot water. If you do not have a proper cookware, just “soak” them in hot water with a covered container or bowl. Then slice the black fungus for better texture.

Then add in some pepper.

Add in some soya sauce, or if you fancy some extra flavor, sesame oil will do the magic. Mixed well and serve.
